Monoazo food colours:-
Amonyg the food colours which are permitted to use for addition to foodstuffs, Tartrazine belownging to monoazo subclass is important. It is derived from sulphanilic acid as diazonium component and 1-(p-sulphophenyl) - pyrazol-(5)-one -3- carboxylic acid as the coupling component, the coupling occurs at the active methylene group in the four positions of the pyrazo lone under alkaline conditions.
